    Recipes Battling The Fungi Serves 4 Preparation Time 5 minutes Cooking Time 20 to 30 minutes Ingredients Knife Cooking Oil 2 tbsp Small onions minced 2 Garlic minced 2 cloves Celery sliced 2 large stalks Brown button mushrooms quartered 150g White button mushrooms quartered 150g Chicken broth 10oz Water 20oz Chicken breast diced 150g Naturel Organic Brown Rice washed and soaked 1 cup Fresh parsley chopped 2 tsp Oyster sauce tsp FairPrice Fine Salt FairPrice White Pepper to taste Ingredients for Marinade Thai fish sauce tsp Light soy sauce 1 tsp FairPrice Corn Flour 2 tsp Sesame oil 1 tsp FairPrice White Pepper to taste Note tbsp tablespoon tsp teaspoon Method In a claypot boil Naturel Organic Brown Rice chicken broth and water over high heat until most of the liquid has evaporated Combine chicken pieces with marinade ingredients Heat Knife Cooking Oil in a pan and sauté onions garlic and celery for a couple of minutes or until fragrant Add mushrooms and oyster sauce and stir fry for 1 minute before adding chicken pieces and stir fry until 90 cooked Scoop chicken mixture over the rice which should already be 90 dry Cook until rice is completely dry Cover

    minced 2 Baby carrot julienned 1 Beijing cabbage sliced 10 leaves Minced beef 100g Mainland Tasty Cheese cut into 6 slices 250g Perfect Italiano Parmesan Cheese Shredded 125g Brown button mushrooms sliced 100g White button mushrooms sliced 100g Fresh basil or dried Italian herbs 1 tsp FairPrice Fine Salt FairPrice White Pepper to taste Ingredients for Marinade Sesame oil tsp Light soy sauce 1 tsp Thai fish sauce tsp Oyster sauce tsp FairPrice Corn Flour 1 tbsp Note tbsp tablespoon tsp teaspoon Method In a pot of boiling salted water add a splash of cooking oil and cook spiral macaroni till al dente Set aside Thoroughly combine minced beef with marinade ingredients and season with a pinch of pepper Heat oil in a wok and sauté onions and garlic till fragrant Add beef and fry for 10 seconds till mixture is loose then add the carrots and cabbage and fry for 20 seconds more Add mushrooms and salt to taste Add macaroni and fry for 20 30 seconds then add fresh milk and cook until it has mostly evaporated Alternately layer macaroni in a flat baking dish with Mainland Tasty Cheese and a generous handful of Perfect Italiano Parmesan Cheese

    oil Peanut oil for shallow frying Lemon 1 wedge Unsalted butter 50g Pasar Singapore Farm Fresh Egg beaten 1 Fine white breadcrumbs or Japanese panko 300g Alfredo sauce 1 packet Button mushrooms sliced cup FairPrice Fine Salt FairPrice White Pepper to taste Note tbsp tablespoon tsp teaspoon Method In a large pan over medium heat heat butter and olive oil and sauté onions and garlic till soft Add New Zealand Greenshell Mussels in a single layer with white wine and season Cover tightly and cook on high heat Simmer for 5 7 minutes until mussels have opened Remove from pan and leave to cool discarding unopened ones Keep the liquid Boil a pot of salted water and cook tagliatelle till al dente Drain and toss with extra virgin olive oil to prevent sticking Set aside Remove mussels from shells when cool to handle Thoroughly mix with mayonnaise turmeric powder and garlic powder Dust mussels in flour then dip in beaten egg and coat with breadcrumbs Fry in hot peanut oil over medium high heat until golden brown Keep warm in oven till needed Blanch spinach leaves in boiling salted water then rinse in cold water and squeeze out excess water
