    Chef Eric Teo First published in Celebrate because it s Christmas Nov 2012 with FairPrice Whip Up A Festive Feast Mediacorp Pte Ltd Reproduced with permission Serves 10 Preparation Cooking Time 1 hour Ingredients Okeanoss Large Prawns thawed on perforated tray in chiller 1kg Strawberries halved 50g Blueberries rinsed 100g Gooseberries leaves unfolded 10 pcs Blackberries whole 50g Raspberries whole 50g Australian mango diced 1 Fresh mint leaves rinsed 20g Cherry tomatoes halved 10 pcs Purple cabbage shredded 100g Baby spinach leaves 100g Grapefruit segment and retain juice 1 Naturel Pure Olive Oil 50ml Butter cubed 20g Small red onion 1 Salt and crushed black pepper for seasoning Ingredients for Citrus Olive Oil Salad Dressing Grapefruit juice 100ml Olive oil 200ml Sugar 20g Salt 5g Black pepper crushed 1g Whisk the olive oil into the grapefruit juice and add seasoning Method Clean and devein the prawns then pat dry with a clean towel Season with a little salt and pepper Heat up a skillet pan to medium high heat and fry the prawns with a little olive oil till fragrant and brown Remove from pan and set aside to cool In a large mixing bowl place all the ingredients and

    with Raisins Recipe by Chef Eric Teo First published in Celebrate because it s Christmas Nov 2012 with FairPrice Whip Up A Festive Feast Mediacorp Pte Ltd Reproduced with permission Serves 10 Preparation Cooking Time 1 hour Ingredients Medium sized croissants sliced 2 pcs Fresh milk 400ml Eggs 4 SIS Raw Sugar 120g Sunmaid Raisins 100g Butter to grease the baking dish Vanilla essence a few drops Icing sugar to garnish Method Butter the baking dish or ramekin and sprinkle a layer of raisins Place the sliced croissants evenly in the dish In the bowl whisk the eggs sugar and a few drops of vanilla essence Slowly pour the mixture into the baking dish pressing down lightly on the croissants to ensure they don t float up Fill just up to of the dish Spread another layer of raisins on top Place the baking dish in a shallow tray or bain marie partly filled with water to prevent pudding from scorching Preheat the oven and bake at 180 C for 45 minutes To test for doneness pierce the pudding with a wooden skewer If it comes out clean it is ready Remove from the oven and dust icing sugar over

    published in Celebrate because it s Christmas Nov 2012 with FairPrice Whip Up A Festive Feast Mediacorp Pte Ltd Reproduced with permission Serves 10 Preparation Cooking Time 1 hour Ingredients Kraft Philadelphia Cream Cheese cut into cubes 100g Fresh milk 20ml Pinch of salt Lemon juice 1 tsp Smoked salmon sliced 300g Caviar 35g Shallot chopped 20g Chive sliced thinly 20g Hard boiled eggs with white and yolks separated grated 2 Wafer crispbread 20 pcs Dash of crushed black pepper Coriander leaves to garnish Method Place the cream cheese fresh milk lemon juice and salt in a large mixing bowl and whip with a spatula till the mixture is well folded Spread the cling film on a clean table and lay the smoked salmon over piece by piece side by side till you form a 15cm square Spread the cheese mix on top of the salmon Roll it up firmly Tie both ends and chill for 30 minutes to an hour Slice the roll into 2 5cm thick pieces Place a slice on top of a wafer crispbread Arrange the chives grated egg whites and egg yolks on the crispbread Top the roll with a dollop of caviar Chef s
